Jun is the sister tonic to kombucha, and, like kombucha, it¡řs tart and fizzy, like a sparkling, gut-healing soda.

The Jun base is an effective probiotic, and like other fermented foods, it helps replenish your gut of friendly bacteria¡Ŕa great aid to the digestive system. It's often referred to as the Champagne of kombuchas due to its delicate taste and high-quality ingredients.

What is Jun Tea?

Unlike regular kombucha, which is fermented with cane sugar and black tea, Jun is made with green tea and relies on a honey sweetener. It's more mild and less sour than traditional kombucha as a result.

The main difference between Jun and kombucha is that the SCOBY (acronym for symbiotic culture of bacteria and yeast) is trained to feed off of honey rather than sugar from the start. If you put a kombucha culture in a honeyed tea, the bacteria wouldn't feed properly and would likely die. The Jun culture, however, is designed to use honey as its fuel source.

    • Quart-size glass jar
    • Plastic or wooden stirring utensil
    • Tight-weave cloth or paper coffee filter
    • Rubber band to secure the cover to the jar

    Ingredients for a¡ÅJun SCOBY

    • 1 Jun¡ÅSCOBY¡Å
    • 2¡ÅTBSP¡Åof loose green tea
    • 1/2 cup¡Åraw honey¡Å
    • 8 cups filtered¡Åwater
    • Cotton cover
    • 1/2 cup jun tea from previous batch
    • PH strips

    INSTRUCTIONS FOR¡Å THE¡ÅJUN TEA

    1. Boil 8 cups of water (approx.2Ltrs)
    2. Place 3 TBSP. of¡Å green tea in the water and let the tea steep for¡Å2-5 mins. Strain the tea through with a fine-mesh sieve.
    3. Add 1/2 cup of honey¡Åinto the tea, stir¡Åit until¡Åit¡Åis¡Ådissolves completely in the tea.¡Å
    4. Let the sweet tea mixture reach room temp. 68-82F (20-27C) Degrees (use thermometer to monitor the temperature.)
    5. Pour the sweet tea into a vessel.
    6. pour the live Jun scoby into the vessel.
    7. Allow the ta to ferment for 3 days at room temperature.
    8. Make sure temperature of the¡ÅJun stays between 68-82F (20-27C) Degrees.
    9. After 3 days , the jun tea should smell sour and faintly sweet.¡Å
    10. Carefully remove the jun culture and 1/2 cups jun tea for your next batch jun tea.¡Å
    11. Pour the remaining Jun tea into bottles and flavor with any juice you like or ginger root ....and allow to ferment a second time for 2-3days. After 2-3days your jun tea is ready to drink. Put in the refrigerator to chill. Keep in mind that, like kombucha, jun will fizz and foam when you open the bottles.¡Å
